The difference between domestic and commercial dishwashers is speed. A Commercial dishwasher will have a lower capacity but is able to complete a full cycle in 3-5 minutes. This sort of efficiency is ideal for restaurants as you can quickly wash plates to be used again within a short amount of time.

A lot of commercial units are available with a number of additional extras such as drain pumps or water softeners but why should you get them? This guide should help you make that decision.

Should I purchase a Counter or Pass-through Dishwasher?

The main factor in this category is space. If you are limited on space then you will have to purchase a counter top/undercounter dishwasher. You would need to confirm what external dimensions you can fit inside the space you have available to you and purchase a unit accordingly. When choosing, bear in mind what you will be washing. If you have exceptionally tall utensils it is wise to make sure the unit you choose is able to fit them inside.

If space isn’t an issue then you may consider a pass-through system. These allow for a full work station to be constructed that allows for maximum efficiency. Site surveys are recommended so you can talk with a qualified engineer and discuss a plan that would be ideal for your premises.

Do I need a Drain Pump?

Nearly all dishwashers at Alexanders have a Gravity Drain as standard or can have a Drain Pump fitted to the unit at an additional cost. You will need a drain pump if the waste water will have to travel upwards to escape the unit. If one is not fitted the waste water will fall back into the unit and contaminate the water supply. Some units are available with a stand to mount the unit higher, this can eliminate the need for a drain pump however it is vital to make sure you have one if needed.

What is a Water Softener and would I need one?

The main factor for needing a water softener is whether you are in a hard or soft water area. If you are unsure then a quick google search will tell you the type of water area you are in. It is highly recommended you order a water softener alongside your unit if you are in a hard water area but we do recommended you order one regardless as it will help extend the working life of your machine by regulating the water quality.

Limescale is the number one killer of ware washing equipment. It can build up over time and create blockages that cause your machine to become ineffective. Limescale issues are not covered under warranty so if you allow it to build up you may be left with a broken machine that you will have to get repaired or replaced. The softener is filled is small beads that have a negative charge. Calcium and magnesium have a natural positive charge. The calcium and magnesium sticks to the beads which removes them from the water solution and you are left with soft water that won’t break down in your machine. Water softeners will need to be recharged as they hold the waste mixture inside. This can be done with regular salt which releases the charged ions.

Am I legally obligated to purchase a unit with a break tank?

The 2005 Water Regulations Advisory Scheme (WRAS) states that all cisterns or tanks connected to the public water supply must protect that water supply from contamination caused by backflow. Commercial dishwashers/glasswashers/washing machines fall under this category so unless you have a private supply of water or a place where these regulations do not apply then you will need to install a break tank.

A break tank is a piece of equipment that creates and air gap to stop reflux (backflow) into the main system. This is to prevent dirty water entering the main supply and contaminating the water. It is highly advised that you purchase a break tank in compliance to the regulations that apply to your premises.
