Crafted from high-alloy stainless steel, its 24cm blade has a Rockwell hardness rating of 56-degrees, so it stays sharp and effective even after prolonged use. The blade also features a special geometrical cutting edge, which is perfect for slicing boneless fish fillets for sashimi and sushi dishes.
Equipped with a round, Asian-inspired handle, this Yanagiba sushi knife is designed to sit perfectly in your hand and meets all the ergonomic requirements of professional and amateur chefs alike. The handle is made of high-quality plastic and provides a comfortable, non-slip grip.
To keep this sushi knife in pristine condition, it is recommended that you clean it by hand using a soft cloth and a mild alkaline detergent.
